WHERE CRAFTSMANSHIP MEETS DUAL ROOTS
Born in Hiroshima to an American father and a Japanese mother, Richard grew up surrounded by the rich bounty of Japan’s mountains and sea. His foundation was built on memories of a dining table where diverse cultures intersected, and a resilient spirit forged through the discipline of Judo. Captivated by the art of "monozukuri" (making things) since childhood, Richard eventually became a carpenter. He honed his meticulous craftsmanship in the world of traditional Japanese architecture, working on the restoration of ancient temples in Nara—a field where even a fraction of a millimeter’s compromise is not permitted. It was here that he learned to "converse" with his materials, a philosophy that remains the core of his work today.

THE "STAMINA" WHIRLWIND IN SAN FRANCISCO
In 2014, Richard moved to the United States with a grand vision: to give shape to his own identity. After refining his skills as a Head Chef at prominent Japanese restaurants in the Bay Area, he launched his long-awaited food truck in San Francisco in 2017. His mission was to distill the "soul" of Western Japanese food culture into a single bowl tailored to the American palate. His signature "Stamina Ramen"—a bold, warming blend of garlic, chives, and chili peppers—combined with the unique energy of a food truck, immediately captured the hearts of trend-setting young professionals and students alike.

STREET FORGED.
Kurotaka Ramen was forged on the streets of San Francisco. Breaking away from the brick-and-mortar mold, Kurotaka's food truck was bringing a dead-serious, authentic bowl to the pavement and shattering every stereotype of street food.


KUROTAKA: BREATHING NEW LIFE INTO FRESNO
The pandemic brought a major turning point and a new calling. Richard moved to Fresno—a place deeply connected to his family roots—to bring an authentic culinary experience to the local community. The name "Kurotaka" (Black Hawk) represents a sharp intuition to discern true flavor and the strength to soar high. Combining the precision he mastered in temple carpentry with boundless creativity, Richard is introducing the hidden depths of Japanese ramen culture to Fresno, igniting a new passion in the local food scene.
